STUFFED ZUCCHINI WITH BREAD CRUMBS

STUFFED ZUCCHINI WITH BREAD CRUMBS ...a nice zucchini bread recipe to try !

INGREDIENTS
  • 4 med. unpeeled zucchini
  • 3/4 c. chopped onion
  • 3/4 c. peeled, chopped fresh tomatoes
  • 1/2 c. fine dry bread crumbs
  • 2 tbsp. chopped capers (opt.)
  • 1/2 tsp. ground pepper
  • 1/4 c. olive oil
  • 1 clove garlic, crushed
  • 1/2 c. chopped mushrooms
  • 2 tbsp. minced parsley
  • 1/2 tsp. salt
  • 1/4 tsp. basil

INSTRUCTIONS
Cover zucchini with water, bring to boil and cook over low heat 3 minutes. Drain, cool and cut in half, lengthwise. Scoop out pulp and reserve shells. Heat olive oil in skillet; saute onion 5 minutes.

Dice zucchini pulp and add with garlic to skillet; saute 3 minutes.
Mix in tomatoes and mushrooms; cook 5 minutes. Remove from heat and mix in bread crumbs, parsley, capers, salt, pepper and basil. Stuff the shells and arrange in an oiled baking dish (may be refrigerated at this point). Bake in 350 degree oven for 30 minutes (40 if cold).

Serve hot or cold. This is a great vegetable dish, I use it a lot. If I am serving it with something else that has mushrooms, I just omit the mushrooms from the zucchini boats. The zucchini bread recipe is ready to serves 8 great persons....great ! Enjoy it !

DOUBLE CHOCOLATE ZUCCHINI BREAD RECIPE

INGREDIENTS
  • 2 sm. zucchini (about 1/2 lb. total) or 2 c. grated
  • 4 c. flour
  • 1/2 c. cocoa
  • 1 1/2 c. sugar
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 1/2 c. oil
  • 3 eggs
  • 1 1/2 c. milk
  • 2 tsp. vanilla
  • 1 c. semi-sweet chocolate chips

INSTRUCTIONS
Heat oven to 350 degrees. Butter 2 (8 x 4) loaf pans.
Grate zucchini. In a large bowl, combine flour, cocoa, sugar, baking soda and powder, salt, cinnamon, and nutmeg. In another bowl, combine zucchini except the chocolate chips. Stir into dry ingredients until just blended. Stir in chocolate chips.
Pour batter into prepared pans. Bake until a toothpick stuck in the center of the bread comes out clean, about 1 hour 15 minutes. Cool on rack 10 minutes, then remove from pans and cool completely. The zucchini bread recipe is ready to serve...enjoy it !

ZUCCHINI PINEAPPLE BREAD RECIPE

INGREDIENTS
  • 2 cups shredded zucchini
  • 1 (8 oz.) can crushed pineapple
  • 3 eggs
  • 1 cup salad oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 3 cups flour unsifted
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg

INSTRUCTIONS
Beat 3 eggs to blend. Add 1 cup salad oil, 2 cups sugar, and 2 teaspoons vanilla. Beat until thick and foamy. Stir in 2 cups shredded zucchini and 1 (8 oz.) can crushed pineapple. Set aside.
Combine 3 cups flour unsifted, 2 teaspoons baking soda, 1/2 teaspoon baking powder, 1 1/2 teaspoons cinnamon, 3/4 teaspoon nutmeg. Stir gently into mixture until just blended. Pour into 2 greased bread pans and bake at 350 degrees until done. Use the toothpick test. The zucchini bread recipe is ready to serve....!

INGREDIENTS
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 teaspooon vanilla
  • 2 cups coarsely grated zucchini (loosely packed)
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup chopped walnuts or pecans

INSTRUCTIONS
In the bowl of an electric mixer, beat 3 eggs until frothy.
Gradually add 2 cups sugar. Stir in 1 cup vegetable oil and 1 tablespoon of vanilla. Beat until thick and lemon colored. Stir in zucchini.
In a medium bowl, whisk together to combine 2 cups flour, 1 teaspoon cinnamon, 1 teaspoon baking soda, 1/4 teaspoon baking powder and 1 teaspoon salt. Stir dry mixture into wet mixture, stirring to combine. Add chopped walnuts or pecans, if desired.
Spray two bread loaf pans (approximately 8"x4"x3") with Baker's Joy, or grease and flour to prevent sticking. Pour batter into pans and level off with the back of a spoon.

Bake for approximately 1 hour or until done.
Allow loaves to cool in pan for 10 minutes, then run a knife along the sides to loosen bread and remove from pans. Cool on wire rack.
Brush tops of loaf with melted butter while still warm. The zucchini bread recipe is ready to serve....enjoy it !

Blueberry Zucchini Bread

INGREDIENTS

* 3 eggs, lightly beaten
* 1 cup vegetable oil
* 3 teaspoons vanilla extract
* 2 1/4 cups white sugar
* 2 cups shredded zucchini
* 3 cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1 tablespoon ground cinnamon
* 1 pint fresh blueberries

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 4 mini-loaf pans.
2. In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Transfer
to the prepared mini-loaf pans.
3. Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely. The zucchini bread recipe is ready to serve...enjoy !

INGREDIENTS

* 2 (1 ounce) squares unsweetened chocolate
* 3 eggs
* 2 cups white sugar
* 1 cup vegetable oil
* 2 cups grated zucchini
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 teaspoon ground cinnamon
* 3/4 cup semisweet chocolate chips

INSTRUCTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
2. In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.
3. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean. The zucchini bread recipe with chocolate is ready to serve....nice one !

* 1 1/2 cups whole wheat flour
* 2 tablespoons ground flax seed
* 1 tablespoon ground cinnamon
* 1 teaspoon salt
* 1 teaspoon baking powder
* 1/4 teaspoon baking soda
* 3 eggs
* 1 tablespoon vanilla extract
* 1/2 cup white sugar
* 1/2 cup brown sugar
* 1/2 cup applesauce
* 1/2 cup vegetable oil
* 1/4 cup shredded carrots
* 2 cups shredded zucchini
* 1 cup dried cranberries
* 1/2 cup chopped walnuts

INSTRUCTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour

two 9x5 inch loaf pans. Whisk together the all-purpose flour, whole wheat flour, flax seed, cinnamon, salt, baking powder, and baking soda in a bowl until evenly combined; set aside.
2. Beat the eggs, vanilla, white sugar, brown sugar, applesauce, and vegetable oil in a mixing bowl until smooth. Fold in the flour mixture, carrots, zucchini, cranberries, and walnuts until no dry spots remain. Divide the batter between the two prepared loaf pans.
3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. The zucchini bread recipe is ready to serve...enjoy !
